Chef Mark’s exposure to Asian Cuisines & Culture began pretty much from the moment he could eat solid foods and later took root as he was one of few Caucasian children in an almost all Asian School in New Malden’s Korea Town, Surrey, UK… tasting different cuisines from various friend’s family dinners and birthdays…
At 15 he began working as a Pot Washer/Kitchen Porter for a small local Thai Restaurant and his love for all foods Asian was well and truly established. After a few years working his way up the chef ladder and trying out different cuisines he became curious about where all these wonderful ingredients came from and so found work as a delivery driver and shop worker for some of the top purveyors of Exotic & Fine Foods, including Partridges of Sloane Street, Asian Grocery Suppliers Wing Yip & Wing Tai (suppliers to many Asian Restaurants including Wagamama) and Wholesale suppliers to Michelin Star Restaurants and Five Star Hotels in London including The Ritz, The Dorchester, The Ivy, The Wolseley, The Savoy and Claridges to name a few..
Disillusioned with the long hours of the industry at the time he followed an opportunity to work in the Media Sector that was too good to turn down and then a stint as an English Teacher in Hong Kong but It was after a few years travelling around S.E Asia and seeing the way they do business over drinks, snacks and entertainment that he found his true culinary calling in Street Foods & Drinking Snacks (basically it's Asian Tapas!) and continues to experiment creating new, fresh & tasty treats inspired by the Street Food & Classic Dishes of S.E Asia with the goal of passing on the flavours & beautiful rich culture of S.E Asian Street foods with the global drinking snacks inspired by Spanish Tapas, Japanese Izakaya & Korean Anju…
